This meaty course is something to really get your teeth into, we’ll be covering a wide range of meat, poultry and game and show you all the techniques you need to know for preparing these dishes from evisceration to presentation (the very start to the very end including garnishing).

Learn how to check the quality points of meat, in particular beef and lamb, find out how to portion poultry the professional way and get some helpful hints on cooking methods for fantastic results every time.

You will also have prepared your evening meal to take home with you.

Nigel Brown Cookery Academy Course Times 

HALF DAY COURSES
 
Classes start at 9.30am and are an excellent way to try new ideas and dishes under Nigel’s expert tuition. They are fully hands-on and include the loan of an Academy apron, refreshments, all ingredients, recipe booklet and suitable containers to take home your work. The class finishes at 1.00pm.
 
ONE DAY COURSES
 
Your day starts at 10.00am with coffee and an introduction to the days recipes. You’ll enjoy refreshments throughout the day and a delicious lunch with wine prepared for you by Nigel. These are fully hands-on courses and include a recipe booklet, suitable containers to take home your work and an Academy apron which is yours to keep.
